My Saturday soup this week is Potato and Onion Family soup. Recipe from Potato Cookbook by James McNair. Last made in December 2006, my family rated it as VG.
Soup contains white onion, leeks, shallots and boiling or baking potatoes. Leeks and shallots were homegrown in my garden last year. Leeks were dug out of the snow today from my garden. Soup contains choice of stocks and heavy or light cream. Today we will use chicken stock and skim milk.
To be pureed in a blender or food processor. My family often prefers soup with whole pieces of vegetables. Today we are going with pureed in a food processor. Now the fun begins with peeling and cutting up the onion family and potatoes.
